But how to make this Tangzhong? It is quite simple, just whisk the two ingredients: flour and water or milk until they form a smooth mixture. The key is to do it slowly and consistently for a better paste. Do not turn the heat to maximum; instead, set it to medium, scrape the mixture into the pan, and whisk until it forms a stiff paste for silky rolls. Place the mixture in the big bowl held with a dough hook. The Japanese technique ensures that the dough retains its moisture, lingering in your mouth for a while.

Let’s start your day with rich, creamy rolls. Begin with 2 tablespoons of milk over low heat, and keep it until it becomes lukewarm. Add the yeast and mix it. Once it dissolved into the mixture, allow it to rest for at least 5 minutes till it becomes foamy. 

Now, we have reached our main recipe. To make Claire Saffitz sour cream and chive rolls, you need a few ingredients. Start with sugar, sour cream, kosher salt, 2 eggs, butter, and 5 cups of bread flour, and add them to the previously made tangzhong.  

It’s time to use the dough, gently take it out, place it on the work surface and start shaping it into a small ball while lightly sprinkling with flour. After making the ball, cover it with a silicone lid or a wrap and let it rest for some time. 

Preheat the pan, heat it, melt 2 tbsp of butter, and once it’s warm, scrape the dough into it. Take the dough and start shaping it into a square again, adding chives as a topping. Apply gentle pressure with your fingertips to form the dough loosely into a rectangle, then cut it into small squares. Place them in the pan with the seam side facing down, cover, and heat over a low flame for about 45 to 60 minutes.
